Caprece Pasta Salad

1 lb. box Pasta (prepared according to directions)

1 Pt. Cherry or Grape Tomatoes (quartered)

1 Lb. Fresh Mozzeralla (cubed)

4 Tbsp. Basil Infused Olive Oil

4 Tbsp. Vanilla Fig Balsamic Vinegar
-
1 Tsp. Dijon Mustard
-
1 Can Garbanzo Beans (Drained)

Parsley Flakes
Directions:
Prepare pasta according to package directions. Drain, Rinse in cold water and set aside. Whisk together olive oil, vinegar & mustard. In large bowl, combine pasta, tomatoes, mozzerella, garbanzos, and oil & vinegar mixture. Stir in parsley flakes for color (since we are not using fresh basil). refrigerate overnight for best results. serve chilled or room temperature.
